Ingredients
  

  • 2 ripe bananas mashed
  • cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon optional
  • ¼ cup chopped walnuts or chocolate chips optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Grease or line a 9x5-inch loaf pan.
  3. Mash the bananas until mostly smooth.
  4. Whisk together the melted butter, sugar, egg, and vanilla.
  5. Stir in the mashed bananas.
  6. In another bowl, combine the flour, baking soda, salt, and cinnamon.
  7. Fold the dry ingredients into the wet mixture until just combined.
  8. Stir in walnuts or chocolate chips if using.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 50–55 minutes or until a toothpick inserted into the center comes out clean.
  11. Cool in the pan for 10 minutes.
  12. Transfer to a wire rack and cool completely before slicing.

Notes

  • he riper the bananas, the sweeter and more flavorful the bread.
  • Do not overmix the batter to keep the loaf tender.
  • Cover loosely with foil if the top browns too quickly.
  • Store at room temperature for up to 3 days.
  • Freeze individual slices for up to 3 months.
  • Add chocolate chips, pecans, or blueberries for extra flavor.
