4-Ingredient Baked Pumpkin Donuts

These soft, fluffy baked pumpkin donuts are made with only four simple ingredients, making them perfect for busy mornings or a quick fall treat. They have a moist texture with warm pumpkin flavor and are baked instead of fried for an easy, lighter dessert. Enjoy them plain, dusted with cinnamon sugar, or topped with a simple glaze.

Ingredients
  

  • 1 cup pumpkin purée
  • 1 box spice cake mix about 15.25 oz
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a donut pan with non-stick spray.
  3. In a large bowl, combine the pumpkin purée, spice cake mix, eggs, and pumpkin pie spice.
  4. Mix until the batter is smooth with no dry streaks.
  5. Spoon or pipe the batter evenly into the donut cavities, filling each about ¾ full.
  6. Bake for 14–16 minutes or until a toothpick inserted comes out clean.
  7. Allow the donuts to cool in the pan for 5 minutes.
  8. Transfer to a wire rack to cool completely.
  9. Serve plain or decorate with your favorite glaze or cinnamon sugar.

Notes

  • • Do not overmix the batter to keep the donuts soft.
  • • A piping bag makes filling the donut pan much easier.
  • • Store leftovers in an airtight container for up to 3 days.
  • • These donuts freeze well for up to 2 months.
  • • Add a vanilla glaze or maple glaze for extra sweetness.
