Almond Croissant Muffins

Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter melted
  • 2 large eggs
  • ¾ cup whole milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ½ cup almond flour
  • cup almond paste crumbled
  • ¼ cup sliced almonds
  • 2 tablespoons coarse sugar
  • Powdered sugar for dusting

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Line a 12-cup muffin pan with paper liners.
  3. Whisk together flour, baking powder, salt, sugar, and almond flour.
  4. In another bowl, whisk melted butter, eggs, milk, vanilla extract, and almond extract.
  5. Pour wet ingredients into dry ingredients and stir until just combined.
  6. Fold in the crumbled almond paste.
  7. Divide the batter evenly among the muffin cups.
  8. Sprinkle sliced almonds and coarse sugar over each muffin.
  9. Bake for 22–25 minutes until golden brown and a toothpick comes out clean.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.
  11. Dust with powdered sugar before serving.

Notes

  • Do not overmix the batter for soft, tender muffins.
  • Use room-temperature ingredients for the best texture.
  • Add a teaspoon of orange zest for extra bakery-style flavor.
  • Store in an airtight container for up to 3 days.
  • Warm slightly before serving for the best taste.
  • Freeze for up to 2 months and thaw at room temperature.
