Authentic Birria Tacos Recipe

Authentic Birria Tacos are a traditional Mexican favorite made with slow-braised beef simmered in a rich, flavorful chili broth. The tender meat is tucked into corn tortillas, dipped in the savory consommé, and pan-fried until perfectly crispy. Serve with extra consommé for dipping for the ultimate taco experience. Perfect for family dinners, celebrations, or weekend cooking.

Ingredients
  

  • 3 lbs beef chuck roast
  • 1 lb beef short ribs
  • 2 dried guajillo chiles
  • 3 dried ancho chiles
  • 2 dried chipotle peppers
  • 1 onion quartered
  • 6 garlic cloves
  • 2 tomatoes
  • 2 tbsp apple cider vinegar
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • ½ tsp ground cinnamon
  • 2 bay leaves
  • 5 cups beef broth
  • Salt to taste
  • Black pepper to taste
  • 12 corn tortillas
  • 2 cups shredded Oaxaca or mozzarella cheese
  • Chopped cilantro
  • Diced white onion
  • Lime wedges
  • Cooking oil

Method
 

  1. Remove stems and seeds from the dried chiles.
  2. Toast the chiles lightly in a dry skillet.
  3. Soak the toasted chiles in hot water for 15 minutes.
  4. Blend soaked chiles, tomatoes, onion, garlic, vinegar, cumin, oregano, paprika, cinnamon, and a little broth until smooth.
  5. Season the beef generously with salt and pepper.
  6. Sear the beef on all sides until browned.
  7. Transfer the beef to a large pot or Dutch oven.
  8. Pour the blended chili sauce over the beef.
  9. Add the remaining beef broth and bay leaves.
  10. Bring to a gentle boil.
  11. Cover and simmer for about 3–3½ hours until the beef is fork-tender.
  12. Remove the beef and shred it.
  13. Strain the broth to make a smooth consommé.
  14. Dip each tortilla into the consommé.
  15. Heat a lightly oiled skillet over medium heat.
  16. Place the dipped tortilla on the skillet.
  17. Add cheese and shredded birria to one half.
  18. Fold the tortilla and cook until crispy on both sides.
  19. Repeat with the remaining tortillas.
  20. Garnish with cilantro and diced onion.
  21. Serve hot with lime wedges and warm consommé for dipping.

Notes

  • Beef chuck provides the best balance of tenderness and flavor.
  • Slow cooking develops the richest consommé.
  • Dip tortillas lightly to avoid tearing.
  • Oaxaca cheese melts beautifully, but mozzarella is a great substitute.
  • Refrigerate leftovers for up to 4 days.
  • The birria tastes even better the next day.
  • Freeze leftover meat and consommé separately for up to 3 months.
