Breakfast Casseroles

This hearty Breakfast Casserole is the perfect make-ahead meal for busy mornings, weekend brunches, or holiday breakfasts. Loaded with eggs, sausage, cheese, and hash browns, it's filling, flavorful, and easy to customize with your favorite vegetables or meats. Prepare it the night before and simply bake when you're ready to serve.

Ingredients
  

  • 8 large eggs
  • 2 cups frozen hash browns thawed
  • 1 pound breakfast sausage
  • cups shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 1 cup milk
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons chopped green onions
  • Cooking spray or butter for greasing the baking dish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish.
  3. Cook the breakfast sausage until browned and drain excess grease.
  4. Spread the hash browns evenly into the baking dish.
  5. Sprinkle the cooked sausage over the hash browns.
  6. Add the shredded cheddar and mozzarella cheese evenly.
  7. In a large bowl, whisk together eggs, milk, garlic powder, onion powder, paprika, salt, and pepper.
  8. Pour the egg mixture evenly over the casserole.
  9. Sprinkle chopped green onions on top.
  10. Bake for 45–50 minutes or until the center is set and the top is golden.
  11. Let the casserole rest for 10 minutes before slicing.
  12. Serve warm and enjoy.

Notes

  • Thaw hash browns completely before using.
  • Substitute bacon or diced ham for the sausage if preferred.
  • Add diced bell peppers, spinach, or mushrooms for extra vegetables.
  • Use freshly shredded cheese for the best melting texture.
  • Assemble the casserole the night before for an easy morning bake.
  • Store leftovers in the refrigerator for up to 4 days.
  • Reheat individual portions in the microwave or oven.
  • This casserole freezes well for up to 2 months.
