Chicken Broccoli Bake

This Chicken Broccoli Bake is a creamy, cheesy comfort food casserole that's perfect for busy weeknights. Tender chicken, fresh broccoli, and a rich cheese sauce come together in one delicious dish. It's easy to prepare, family-friendly, and great for meal prep or leftovers.

Ingredients
  

  • 2 cups cooked chicken breast shredded or diced
  • 3 cups broccoli florets
  • 1 can 10.5 oz cream of chicken soup
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup crushed buttery crackers
  • 2 tablespoons melted butter

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. Steam broccoli for 3–4 minutes until slightly tender.
  4. Spread broccoli evenly in the baking dish.
  5. Top with the cooked chicken.
  6. In a bowl, mix cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, salt, and pepper.
  7. Stir in 1½ cups cheddar cheese.
  8. Spread the mixture evenly over the chicken and broccoli.
  9. Sprinkle the remaining cheddar cheese and Parmesan cheese on top.
  10. Mix crushed crackers with melted butter.
  11. Sprinkle the buttery cracker mixture over the casserole.
  12. Bake for 30–35 minutes until hot and bubbly.
  13. Broil for 2–3 minutes for a crisp golden topping if desired.
  14. Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken to save preparation time.
  • Fresh or frozen broccoli both work well.
  • Add cooked rice or pasta to make it even heartier.
  • Swap cheddar with mozzarella or Monterey Jack for a different flavor.
  • Store leftovers in an airtight container for up to 3 days.
  • Freeze before baking for an easy make-ahead meal.
