Cinnamon Sweet Potato Breakfast Cookies

Ingredients
  

  • 1 cup mashed cooked sweet potato
  • cups old-fashioned rolled oats
  • 1 cup whole wheat flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ¼ cup maple syrup or honey
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • ¼ cup chopped pecans or walnuts optional
  • ¼ cup raisins or dried cranberries optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking tray with parchment paper.
  3. In a large bowl, combine oats, flour, cinnamon, nutmeg, baking powder, and salt.
  4. In another bowl, whisk together mashed sweet potato, egg, maple syrup, melted coconut oil, and vanilla.
  5. Pour the wet ingredients into the dry ingredients.
  6. Mix until a soft cookie dough forms.
  7. Fold in the nuts and raisins if using.
  8. Scoop about 2 tablespoons of dough onto the prepared baking tray.
  9. Flatten each cookie slightly with the back of a spoon.
  10. Bake for 16–18 minutes or until the edges are lightly golden.
  11. Cool on the baking tray for 5 minutes.
  12. Transfer to a wire rack and cool completely before serving.

Notes

  • Use freshly mashed sweet potato for the best texture.
  • Do not overmix the dough to keep the cookies tender.
  • Add dark chocolate chips for a sweeter variation.
  • Store in an airtight container for up to 4 days.
  • Freeze baked cookies for up to 2 months.
  • Warm for a few seconds before serving for the best flavor.
