Cowboy Tater Tot Casserole

A hearty, family-friendly casserole loaded with seasoned ground beef, beans, corn, creamy sauce, melted cheese, and crispy golden tater tots. Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 can 15 oz kidney beans, drained
  • 1 cup corn kernels
  • 1 can 10.5 oz cream of mushroom soup
  • ½ cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag 32 oz frozen tater tots
  • 2 tablespoons chopped parsley

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish.
  3. Cook the ground beef and diced onion until browned.
  4. Drain any excess grease.
  5. Stir in garlic and cook for 30 seconds.
  6. Add chili powder, smoked paprika, salt, and black pepper.
  7. Mix in the kidney beans and corn.
  8. Stir in the cream of mushroom soup.
  9. Fold in the sour cream until well combined.
  10. Spread the beef mixture evenly into the baking dish.
  11. Sprinkle 1½ cups shredded cheddar cheese over the mixture.
  12. Arrange frozen tater tots in a single layer on top.
  13. Bake for 35 minutes.
  14. Sprinkle the remaining cheese over the tater tots.
  15. Bake for another 8–10 minutes until the cheese melts and the tots are crispy.
  16. Garnish with chopped parsley.
  17. Let rest for 5 minutes before serving.

Notes

  • Use ground turkey instead of beef for a lighter version.
  • Add diced jalapeños for extra heat.
  • Pepper Jack cheese adds a spicy kick.
  • Frozen mixed vegetables work well in place of corn.
  • Do not thaw the tater tots before baking.
  • Leftovers keep well in the refrigerator for up to 3 days.
  • Reheat in the oven or air fryer to keep the tater tots crispy.
