Ingredients
  

  • 4 bone-in chicken thighs or drumsticks
  • 2 cups buttermilk
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper optional
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Vegetable oil for frying

Method
 

  1. Pat the chicken dry with paper towels.
  2. Mix buttermilk, salt, pepper, garlic powder, onion powder, paprika, and cayenne in a large bowl.
  3. Add the chicken and coat completely.
  4. Cover and marinate for at least 30 minutes or overnight.
  5. In another bowl, combine flour, baking powder, oregano, thyme, and a pinch of salt.
  6. Remove each chicken piece from the marinade.
  7. Dredge thoroughly in the seasoned flour mixture.
  8. Let the coated chicken rest for 10 minutes.
  9. Heat vegetable oil to 350°F (175°C).
  10. Fry the chicken in batches without overcrowding the pan.
  11. Cook for 12–15 minutes per side until golden brown.
  12. Ensure the internal temperature reaches 165°F (74°C).
  13. Transfer to a wire rack to drain excess oil.
  14. Rest for 5 minutes before serving.

Notes

  • Marinating overnight gives the juiciest results.
  • Let the coating rest before frying for extra crispiness.
  • Maintain oil temperature between 325–350°F.
  • Avoid overcrowding the fryer.
  • Use a meat thermometer for perfectly cooked chicken.
  • Serve with mashed potatoes, fries, coleslaw, or biscuits.
  • Leftovers stay fresh in the refrigerator for up to 3 days.
  • Reheat in the oven or air fryer to keep the coating crispy.
