Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 medium potatoes diced
  • 2 carrots sliced
  • ½ onion chopped
  • 2 cloves garlic minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

  1. Lightly grease the crockpot with cooking spray or a little oil.
  2. Place the diced potatoes, carrots, onion, and garlic into the bottom of the slow cooker.
  3. Season the chicken breasts with salt, pepper, paprika, and Italian seasoning.
  4. Lay the seasoned chicken over the vegetables.
  5. Pour the chicken broth and olive oil over everything.
  6. Cover with the lid.
  7. Cook on LOW for 6 hours or HIGH for 3–4 hours until the chicken is tender.
  8. Shred or serve the chicken whole as desired.
  9. Stir everything gently before serving.
  10. Garnish with fresh parsley and enjoy warm.

Notes

  • Baby potatoes work well and require less prep.
  • Add green beans during the last hour for extra vegetables.
  • Boneless chicken thighs can be substituted for a juicier meal.
  • Avoid lifting the lid while cooking to retain heat.
  • Store leftovers in the refrigerator for up to 3 days.
  • Freeze portions for up to 2 months.
