Ingredients
  

  • 1 baked 9-inch pie crust cooled
  • 1 cup granulated sugar
  • ½ cup unsalted butter softened
  • 2 ounces unsweetened chocolate melted and cooled
  • 1 teaspoon vanilla extract
  • 3 large pasteurized eggs
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings for garnish
  • Whipped cream for topping

Method
 

  1. Beat the butter and sugar together until light and fluffy.
  2. Mix in the melted chocolate and vanilla extract.
  3. Add one egg and beat for 5 minutes.
  4. Repeat with the remaining eggs, beating 5 minutes after each addition.
  5. Spoon the chocolate filling into the cooled pie crust.
  6. Refrigerate for at least 5 hours or overnight.
  7. Whip the heavy cream with powdered sugar until stiff peaks form.
  8. Spread or pipe whipped cream over the chilled pie.
  9. Garnish with chocolate shavings.
  10. Slice and serve chilled.

Notes

  • Use pasteurized eggs for food safety.
  • Make sure the melted chocolate is completely cooled before mixing.
  • Chill overnight for the silkiest texture.
  • A homemade or store-bought pie crust both work well.
  • Store leftovers covered in the refrigerator for up to 3 days.
