Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. Cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time.
  5. Mix in vanilla extract.
  6. Whisk together flour, baking soda, cinnamon, and salt.
  7. Gradually add the dry ingredients to the wet ingredients.
  8. Fold in the rolled oats.
  9. Stir in raisins or chocolate chips if using.
  10. Scoop tablespoon-sized portions onto the prepared baking sheets.
  11. Bake for 10–12 minutes until the edges are lightly golden.
  12. Let cookies cool on the baking sheet for 5 minutes.
  13. Transfer to a wire rack to cool completely.

Notes

  • Use old-fashioned rolled oats for the best chewy texture.
  • Do not overbake; the cookies will continue to firm up as they cool.
    Add chopped walnuts or pecans for extra crunch.
  • Chill the dough for 30 minutes for thicker cookies.
  • Store in an airtight container for up to 5 days.
  • Freeze baked cookies for up to 3 months.
