Ingredients
  

  • 3 cups cooked chicken breast shredded
  • 4 cups broccoli florets
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 tablespoons whole wheat flour
  • cups low-fat milk
  • 1 cup shredded reduced-fat cheddar cheese
  • ¼ cup plain Greek yogurt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup whole wheat breadcrumbs
  • 1 tablespoon grated Parmesan cheese
  • Cooking spray

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish with cooking spray.
  3. Steam the broccoli for 3–4 minutes until slightly tender.
  4. Drain the broccoli well.
  5. Melt the butter with olive oil in a saucepan.
  6. Whisk in the whole wheat flour.
  7. Cook for 1 minute while stirring.
  8. Slowly whisk in the milk until smooth.
  9. Simmer until the sauce thickens.
  10. Stir in the cheddar cheese until melted.
  11. Mix in the Greek yogurt.
  12. Add the garlic powder.
  13. Add the onion powder.
  14. Stir in the paprika.
  15. Season with salt and black pepper.
  16. Fold in the cooked chicken.
  17. Add the steamed broccoli.
  18. Mix until everything is evenly coated.
  19. Transfer the mixture to the prepared baking dish.
  20. Sprinkle the breadcrumbs evenly over the top.
  21. Add the grated Parmesan cheese.
  22. Bake for 25–30 minutes until hot and bubbly.
  23. Broil for 2 minutes for a golden topping if desired.
  24. Let the casserole rest for 5 minutes before serving.

  • Rotisserie chicken works great for a quick shortcut.
  • Do not overcook the broccoli before baking.
  • Greek yogurt keeps the casserole creamy while reducing fat.
  • Add brown rice or quinoa for a heartier meal.
