Pat the chicken dry with paper towels.
Place chicken in a large bowl.
Pour buttermilk over the chicken.
Cover and refrigerate for at least 4 hours or overnight.
In another bowl combine flour, paprika, garlic powder, onion powder, black pepper, white pepper, salt, thyme, oregano, cayenne, and baking powder.
Mix the flour mixture thoroughly.
Remove chicken from the buttermilk.
Allow excess buttermilk to drip off.
Coat each chicken piece generously in the seasoned flour.
Press the coating firmly onto the chicken.
Let coated chicken rest for 10 minutes.
Heat vegetable oil to 325°F (163°C).
Carefully place chicken into the hot oil.
Fry in batches without overcrowding.
Cook for 15–20 minutes, turning occasionally.
Chicken should reach an internal temperature of 165°F (74°C).
Transfer to a wire rack.
Rest for 5 minutes before serving.
Serve hot with your favorite side dishes.
