Ingredients
  

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cooked chickpeas
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • ¼ red onion thinly sliced
  • ½ cup kalamata olives
  • ½ cup crumbled feta cheese
  • 1 cup hummus
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Method
 

  1. Rinse the quinoa thoroughly.
  2. Bring water to a boil and cook quinoa until tender.
  3. Allow the cooked quinoa to cool slightly.
  4. Whisk together olive oil, lemon juice, cumin, paprika, salt, and pepper.
  5. Toss the quinoa with half of the dressing.
  6. Combine tomatoes, cucumber, onion, chickpeas, and olives in a bowl.
  7. Add the remaining dressing and mix gently.
  8. Spread hummus onto each serving plate or bowl.
  9. Top with seasoned quinoa.
  10. Add the vegetable and chickpea mixture.
  11. Sprinkle with feta cheese.
  12. Garnish with fresh parsley.
  13. Serve immediately with warm pita if desired.

Notes

  • Use fresh lemon juice for the best flavor.
  • Add grilled chicken or lamb for extra protein.
  • Substitute couscous or bulgur for quinoa if preferred.
  • Store leftovers in an airtight container for up to 2 days.
  • Keep the dressing separate if preparing ahead.
  • Serve with warm pita bread for a complete meal.
