No-Bake Pumpkin Energy Balls Recipe

These No-Bake Pumpkin Energy Balls are a wholesome, bite-sized snack packed with oats, pumpkin puree, nut butter, and warm fall spices. Ingredients
  

  • 1 cup old-fashioned rolled oats
  • ½ cup pumpkin puree
  • ¼ cup natural peanut butter or almond butter
  • 2 tablespoons maple syrup or honey
  • 1 tablespoon ground flaxseed
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ¼ cup mini chocolate chips optional

Method
 

  1. Add the oats, flaxseed, pumpkin pie spice, cinnamon, and salt to a large mixing bowl.
  2. Stir in the pumpkin puree, nut butter, maple syrup, and vanilla extract.
  3. Mix until everything is evenly combined.
  4. Fold in the mini chocolate chips if using.
  5. Chill the mixture for 20 minutes if it feels too soft.
  6. Scoop about 1 tablespoon of mixture and roll into balls.
  7. Place the energy balls on a lined tray or plate.
  8. Refrigerate for at least 30 minutes before serving.
  9. Store in an airtight container in the refrigerator for up to one week.

Notes

  • Use certified gluten-free oats if needed.
  • Almond butter creates a slightly milder flavor than peanut butter.
  • Add chopped pecans or walnuts for extra crunch.
  • If the mixture is sticky, add a few extra oats.
  • Freeze for up to 3 months in a freezer-safe container.
  • Enjoy straight from the fridge for the best texture.
