Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line baking sheets with parchment paper.
  3. Cream the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time.
  5. Mix in the vanilla extract.
  6. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  7. Gradually add the dry ingredients to the wet mixture.
  8. Stir in the rolled oats until evenly combined.
  9. Fold in the raisins.
  10. Scoop tablespoon-sized portions onto the prepared baking sheets.
  11. Leave about 2 inches of space between each cookie.
  12. Bake for 10–12 minutes or until the edges are lightly golden.
  13. Let the cookies cool on the baking sheet for 5 minutes.
  14. Transfer to a wire rack to cool completely.

Notes

  • Use old-fashioned rolled oats for the best chewy texture.
  • Soak raisins in warm water for 10 minutes for extra softness.
  • Do not overbake to keep the centers soft.
  • Add chopped walnuts or pecans for extra crunch.
  • Store in an airtight container for up to 5 days.
  • Freeze the cookie dough for up to 3 months.
