Peruvian Chicken with Green Sauce

Ingredients
  

  • pounds bone-in chicken thighs and drumsticks
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 tablespoons lime juice
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
For the Green Sauce
  • 1 cup fresh cilantro leaves
  • 2 jalapeños seeded if desired
  • 2 cloves garlic
  • ½ cup mayonnaise
  • ¼ cup Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1 tablespoon grated Parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Method
 

  1. Pat the chicken dry with paper towels.
  2. Combine olive oil, garlic, lime juice, paprika, cumin, oregano, salt, and pepper.
  3. Rub the marinade evenly over the chicken.
  4. Cover and refrigerate for at least 2 hours or overnight.
  5. Preheat the oven to 425°F (220°C) or prepare a grill over medium-high heat.
  6. Roast the chicken for 35–40 minutes until golden and cooked through.
  7. If grilling, cook for 30–35 minutes, turning occasionally until the internal temperature reaches 165°F (74°C).
  8. Meanwhile, add cilantro, jalapeños, garlic, mayonnaise, yogurt, lime juice, olive oil, Parmesan, salt, and pepper to a blender.
  9. Blend until smooth and creamy.
  10. Adjust seasoning or lime juice to taste.
  11. Serve the hot chicken with the green sauce on the side.
  12. Garnish with extra cilantro and lime wedges if desired.

Notes

  • Marinate overnight for the deepest flavor.
  • Adjust the number of jalapeños to control the heat.
  • The green sauce can be prepared a day ahead.
  • Store leftovers in an airtight container for up to 4 days.
  • Serve with rice, roasted potatoes, fries, or a fresh salad.
  • Extra green sauce also makes a delicious sandwich spread or dip.
