Strawberry Pop-Tarts

These homemade Strawberry Pop-Tarts feature a buttery, flaky pastry filled with sweet strawberry jam and topped with a simple vanilla glaze. They're perfect for breakfast, brunch, or an afternoon snack. Easy to prepare and much tastier than store-bought versions, these pastries can be enjoyed fresh or made ahead for busy mornings.

Ingredients
  

  • cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1 cup unsalted butter cold and cubed
  • 6 –8 tablespoons ice water
  • ¾ cup strawberry jam
  • 1 egg
  • 1 tablespoon milk
  • 1 cup powdered sugar
  • 2 tablespoons milk for glaze
  • ½ teaspoon vanilla extract
  • Pink sprinkles optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. Mix flour, sugar, and salt in a large bowl.
  4. Cut in the cold butter until the mixture resembles coarse crumbs.
  5. Add ice water one tablespoon at a time until the dough comes together.
  6. Divide the dough into two discs.
  7. Chill the dough for 30 minutes.
  8. Roll out each disc into a rectangle.
  9. Cut into equal-sized rectangles.
  10. Place half of the rectangles onto the prepared baking sheet.
  11. Spoon about 1 tablespoon of strawberry jam into the center of each rectangle.
  12. Leave a small border around the edges.
  13. Brush the edges with beaten egg.
  14. Top with the remaining pastry rectangles.
  15. Press the edges with a fork to seal.
  16. Poke a few holes in the tops with a fork.
  17. Brush the tops with the remaining egg wash.
  18. Bake for 22–25 minutes or until golden brown.
  19. Cool completely on a wire rack.
  20. Whisk together powdered sugar, milk, and vanilla until smooth.
  21. Spread the glaze over the cooled Pop-Tarts.
  22. Decorate with pink sprinkles if desired.
  23. Allow the glaze to set before serving.

Notes

  • Use good-quality strawberry jam for the best flavor.
  • Keep the butter cold for flaky pastry.
  • Chill the assembled Pop-Tarts before baking if the dough becomes soft.
  • Avoid overfilling to prevent leaks.
  • Store in an airtight container for up to 3 days.
  • Freeze unglazed Pop-Tarts for up to 2 months.
  • Warm leftovers in a toaster oven for a fresh-baked taste.
