Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 cups corn kernels fresh, grilled, or frozen
  • 1 romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • ½ cup red onion diced
  • 1 avocado diced
  • ¼ cup chopped cilantro
  • ½ cup cotija cheese crumbled
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste
  • Lime wedges for serving

Method
 

  1. Season the chicken with salt, pepper, garlic powder, and smoked paprika.
  2. Grill or cook the chicken until fully cooked.
  3. Let the chicken rest for 5 minutes.
  4. Slice the chicken into bite-sized pieces.
  5. Cook or grill the corn until lightly charred.
  6. In a small bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper.
  7. In a large salad bowl, combine lettuce, corn, tomatoes, red onion, avocado, cilantro, and cotija cheese.
  8. Add the sliced chicken.
  9. Pour the dressing over the salad.
  10. Toss gently until everything is evenly coated.
  11. Serve immediately with fresh lime wedges.

Notes

  • Grilled corn gives the best smoky flavor.
  • Rotisserie chicken works well for a quicker version.
  • Add jalapeños for extra heat.
  • Substitute feta if cotija cheese is unavailable.
