Teriyaki Chicken and Pineapple Foil Packet

Ingredients
  

  • 2 boneless skinless chicken breasts cut into bite-sized pieces
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 small red onion sliced
  • 1 zucchini sliced
  • 1 cup broccoli florets
  • ½ cup teriyaki sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 tablespoon sesame seeds
  • 2 tablespoons chopped green onions
  • Cooked white or brown rice for serving (optional)

Method
 

  1. Preheat the oven to 400°F (200°C) or preheat the grill to medium-high heat.
  2. Cut four large sheets of heavy-duty aluminum foil.
  3. In a large bowl, combine the chicken, pineapple, bell peppers, onion, zucchini, and broccoli.
  4. Add the teriyaki sauce, olive oil, garlic, ginger, salt, and black pepper.
  5. Toss until everything is evenly coated.
  6. Divide the mixture evenly among the foil sheets.
  7. Fold and seal each packet tightly to lock in the steam.
  8. Bake for 22–25 minutes or grill for 20–25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  9. Carefully open the packets to avoid hot steam.
  10. Sprinkle with sesame seeds and chopped green onions.
  11. Serve immediately over cooked rice if desired.

Notes

  • Use chicken thighs for extra juicy results.
  • Fresh pineapple gives the best flavor, but canned pineapple chunks work well too.
  • Cut all vegetables into similar sizes for even cooking.
  • Add snap peas, mushrooms, or carrots for more vegetables.
  • For a spicy kick, mix in red pepper flakes or sriracha.
  • Double the teriyaki sauce if serving with rice.
  • Heavy-duty foil helps prevent leaks during cooking.
  • Store leftovers in an airtight container for up to 3 days.
