Grease a 9x5-inch loaf pan and set aside.
In a large mixing bowl, combine the gluten-free flour, yeast, sugar, salt, and xanthan gum.
Add the warm milk, eggs, olive oil, and apple cider vinegar.
Mix for 4–5 minutes until a thick, smooth batter forms.
Transfer the batter into the prepared loaf pan and smooth the top.
Cover loosely and let rise in a warm place for 35–45 minutes.
Preheat the oven to 375°F (190°C).
Bake for 40–45 minutes until golden brown and fully cooked.
Cool in the pan for 10 minutes.
Remove the loaf and cool completely on a wire rack before slicing.
